Ingredients

Biscuit crust

175g chocolate biscuits

50g butter, melted

For the filling

100g Menier dark chocolate

3 medium eggs, separated

40g caster sugar

16 raspberries

Preparation method

  1. In a food processor blitz the biscuits into fine crumbs and mix in the melted butter.

  4. Next, make the filling. Melt the chocolate in a bowl over a pan of boiling water then cool slightly.
  5. In a separate bowl, whisk the egg whites until peaks start to form, then add the sugar gradually, whisking the whole time.
  6. Mix the egg yolks into the cooled melted chocolate. Stir a spoonful of the egg whites in to loosen the mixture, then carefully fold in the remainder of the egg whites. Spoon half the mousse mixture into the tartlet cases, then divide the raspberries evenly between the 4 tartlets. Top with the remaining mousse mixture.
  7. Cook for 10-12 mins until just firm, but still slightly wobbly in the centre. Serve immediately with whipped cream and more raspberries. Eat warm or cool.

Ready, Steady Bake…Menier launches its fabulous Bakeathon challenge!

Are you holding a cake sale or a coffee morning to raise funds for charity or maybe for your local school or community organisation?  Then we want to hear from you!

During the month of June we will giveaway bars of cooking chocolate to people who are baking to raise money for good causes.

Why? Because we know lots of our bakers selflessly devote hours and hours of their time to bake in the kitchen, creating lovely cakes for fundraising purposes and we would like to help contribute in recognition of this good baking work.

To receive some free chocolate please post a message on facebook and tell us why and who you are baking for, if possible include an image or a recipe you are using.

We will pick 5 people each week during the month and send them a selection of cooking chocolate to bake with.

In return we would love you to take pictures of our bake and share them with us and also let us know how your cake fundraising efforts go!  There will also be an additional prize of chocolate for the best bakes at the end of the month.

So get stuck in, tell us your story and let us help you create beautiful bakes.

Happy Baking!
